Saucy Veggies


You can really make this dish anything you want it to be. By changing the vegetables, 
the dish takes on different dimensions and textures. It accompanies fish and chicken well, 
and is even great served over spaghetti squash or pasta. Enjoy!



Ingredients:

  • Garlic, optional
  • Onion, optional
  • Zucchini or other veggies
  • Greens
  • Coconut or avocado oil 
  • Tomato sauce / marinara sauce
  • Red pepper flakes, optional
  • Fresh parsley, optional 


Directions:

  1. Lightly sauté garlic and onions in coconut oil
  2. Add remaining veggies and lightly sauté
  3. Add tomato sauce or marinara to the veggies
  4. Simmer until sauce is hot and veggies are tender
  5. Serve topped with red pepper flakes and fresh parsley, optional
