Quick-Curried Veggies

This dish is so easy and tasty!





Ingredients:

(For one serving)

1/3 small zucchini, sliced
2 handfuls of mixed power greens (or any greens)
a few small white mushrooms, sliced
1 small scallion, sliced 

1 tsp coconut oil, for sautéing 

pinch garlic powder
pinch curry powder
pinch turmeric

salt and pepper, to taste





Directions:

  1. Heat the coconut oil in a sauté pan over medium/high heat
  2. Add mushrooms and whites of the scallion, sauté for one minute
  3. Add all of the spices 
  4. Turn down the heat to medium and add the zucchini, sauté for one minute
  5. Add the greens and the rest of the scallion
  6. Serve! Try it...
    • over a roasted or mashed sweet potato
    • over avocado toast in my Typical Breakfast
    • on top of a burger
    • or just enjoy as a side dish to any meal like I did with the eggs and avocado shown below!
