Creamy Tomato Soup with Zucchini Ribbons

This soup is dairy-free, takes only a few minutes to make, and is absolutely delicious!


Ingredients:

  • 1/3 c marinara sauce (I like the glass jars of Rao's Homemade Marinara)
  • 1/4 c water
  • avocado oil (or olive)
  • 1 heaping tbs nutritional yeast, or more to taste
  • 1/2 small zucchini
  • a few small white button mushrooms, sliced
  • salt and pepper
  • red pepper flakes, optional


Directions:

  1. Take a vegetable peeler and peel the zucchini into ribbons
  2. Heat a small amount of avocado oil in a sauté pan
  3. Add sliced mushrooms and sauté
  4. Add the zuchinni ribbons, salt, and pepper
  5. Sauté for a few minutes until slightly tender
  6. Add marinara sauce and water to the pan, toss with the veggies 
  7. Simmer for one minute (or until sauce is hot)
  8. Add the soup to a bowl 
  9. Add the nutritional yeast and red pepper flakes to the tomato soup and veggies, stir *the nutritional yeast is what gives it a creamy texture and flavor
