Naturally Sweet Valentine Beets


Happy Valentine's Day! 

These beautiful beets can be made any time, but they're especially perfect for February 14th. Roasting them caramelizes the natural sugars making them extra sweet and yummy. They are the perfect toppers for a warm winter salad, in addition to your favorite protein, or tasty enough to just pop as a snack. Impress the ones you love this holiday with a gorgeous dish of roasted beets and serve up something delicious.Either way, you will enjoy these beautiful and sweet roasted vegetables. 



Ingredients:

  • 2 small beets 
  • olive oil
  • salt and pepper

Directions:

  1. Preheat oven to 400 degrees F
  2. Peel beets and cut into slices 
  3. Place in bowl and toss with 1-2 tbs of olive oil and a pinch of salt and pepper until coated evenly 
  4. Place on cast iron skillet or parchment lined baking pan without overlapping the beets to ensure they cook evenly
  5. Place in the oven for 10-12 minutes
  6. Be sure to flip the beets and put back in the oven for another 10 minutes or until done
  7. Enjoy! and try not to eat them all before serving ;)
