Shakshuka: Saucy Veggie Egg Skillet


Pictured here is an easy skillet I threw together with leftover chicken cacciatore sauce from the night before.
Simply throw some eggs on top and you have an easy breakfast, lunch, or dinner!


Ingredients:


  • 2 eggs
  • Tomato sauce or marinara (leftover sauce from a pasta dinner, jarred sauce, or homemade sauce)
  • Veggies 
  • 2 tbs water
  • Fresh herbs (basil, cilantro, parsley) for topping, optional
  • Grated cheese for topping, optional
  • Crushed red pepper flakes, optional


Directions:


  • Sauté veggies until tender in a pan 
  • Add sauce and water and stir to combine
  • Bring to a simmer for 1 minute
  • Turn the heat down to medium 
  • Add eggs over the veggies
  • Cover the pan with a lid for about 4-6 minutes (or until whites are cooked through)
  • Top and enjoy!!
