Pictured here is an easy skillet I threw together with leftover chicken cacciatore sauce from the night before. Simply throw some eggs on top and you have an easy breakfast, lunch, or dinner! |
Ingredients:
- 2 eggs
- Tomato sauce or marinara (leftover sauce from a pasta dinner, jarred sauce, or homemade sauce)
- Veggies
- 2 tbs water
- Fresh herbs (basil, cilantro, parsley) for topping, optional
- Grated cheese for topping, optional
- Crushed red pepper flakes, optional
Directions:
- Sauté veggies until tender in a pan
- Add sauce and water and stir to combine
- Bring to a simmer for 1 minute
- Turn the heat down to medium
- Add eggs over the veggies
- Cover the pan with a lid for about 4-6 minutes (or until whites are cooked through)
- Top and enjoy!!
