Cranberry Glazed Turkey Meatloaf

Cranberry Glazed Turkey Meatloaf + Cranberry Orange Jam = The Perfect Match


This classic comfort-food got a make over! The dish is inspired by the traditional turkey dinner with stuffing and cranberry sauce. Served with some mashed potatoes (or cauliflower mash) and some green beans would be amazing!!! Who wouldn't love that? 




The cranberry glaze is actually a cranberry orange spread added to the meatloaf in the last 20 minutes of baking. It is delicious and is the key to making this meatloaf fantastic. I also serve the rest of the spread with the meatloaf itself, because who doesn't love more sauce?

Note: The cranberry orange spread is also great as a jam on toast and for serving with other foods like my chicken salad recipe. 



Cranberry Orange Spread Ingredients:




  • 1 lb frozen cranberries
  • 1/2 c water
  • juice and zest of 1 orange
  • 2-4 tbs pure maple syrup



Cranberry Orange Spread Directions:

  1. Add cranberries to a medium sized pot and cover with water
  2. Set to high heat
  3. Stir occasionally so that the cranberries don't burn (it should be at a low boil)
  4. After ten minutes, scoop about a quarter cup into a blender and reserve for the meatloaf
  5. Reduce heat to low
  6. Add the orange juice and zest to the pot
  7. Stirring so that it doesn't burn, cook for another 5 minutes
  8. Remove from heat and stir in maple syrup (adjust sweetness to your taste)
  9. Let it cool 
  10. Reserve for meatloaf glaze and for serving with the meatloaf
  11. Store extras in the refrigerator (a glass jar works great)


Meatloaf Ingredients:


  • 1 lb ground turkey
  • 1/2 white onion
  • 1 tbs avocado or olive oil
  • 3 celery stalks
  • 1/2 c pumpkin puree
  • 1/4 c cooked cranberries (reserved from the cranberry orange spread)
  • 1 egg
  • 1 1/2 c gluten free panic bread crumbs, bread crumbs, or almond meal
  • 1 tsp dried sage
  • 1 tsp dried thyme
  • salt and pepper




Meatloaf Directions:

  1. Preheat the oven to 350 degrees F
  2. Chop up the celery and onion and lightly sauté in a pan with oil (do not brown)
  3. Take the reserved cranberries and add to a blender with the celery and onion - only pulse for a few seconds, you want it to be chunky
  4. In a large bowl add the ground turkey, pumpkin, egg, and seasonings, mix to combine
  5. Add the pulsed cranberries and veggies to the meatloaf and combine
  6. Add the breadcrumbs or almond meal to the meatloaf and combine
  7. Line a sheet pan with parchment paper
  8. Dump the entire mixture onto the center of the paper
  9. Form int a loaf with your hands
  10. Bake for 30 minutes
  11. Coat top with cranberry orange spread
  12. Bake additional 20 minutes, or until done
  13. Serve with extra cranberry orange spread
  14. Enjoy!
