Bitter Greens with Lemon Vinaigrette



This tasty bowl of bitter greens compliments well with the creaminess of the avocado and the smokiness of the salmon. Don't let "bitter" fool you, this salad is tastes great and has loads of benefits. It is packed with plenty of nutrients and healthy fats to keep you healthy and satisfied. Go for it and dig in to the delicious array of balanced flavors.

Lemon Vinaigrette



Ingredients:
  • 3 tbs extra virgin olive oil
  • 1 tbs lemon juice
  • 1 tbs apple cider vinegar (or other white vinegar)
  • tiny pinch of salt and pepper


Directions:

  • Add everything to a bowl and stir to combine
  • Slowly whisk in olive oil 
  • Enjoy! (keeps in the refrigerator a few days)






Bitter Greens Salad



Ingredients:
  • Dandelion greens, washed and chopped
  • Radicchio, shredded
  • 2 oz wild-caught smoked salmon, optional
  • 1/4 avocado
  • Lemon wedge
  • Black pepper
  • Lemon Vinaigrette, optional


Directions:

  1. Toss dandelion greens and radicchio in a salad bowl
  2. Add smoked salmon and avocado
  3. Squeeze a fresh lemon wedge over the salad
  4. Top with fresh cracked black pepper
  5. Drizzle with lemon vinaigrette, optional
