This dish will impress any seafood lover.
Packed with a medley of amazing Mediterranean flavors, your taste buds will not be missing out!
Notes: You can also use another white fish in this recipe, omit the squid if you are not a fan, or even make the squid without the fish in the Mediterranean Sauce.
Ingredients:
- 3 cod filets (fresh or frozen)
- 1 lb fresh squid, tubes and tentacles (tubes sliced, and tentacles whole)
- 1 sweet red pepper, sliced
- 1 can of artichokes hearts in water, drained and chopped
- 1/3 c white cooking wine
- 4 tbs avocado oil, separated
- 2 tbs garlic, minced
- 1/2 lemon, zested and juiced
- Red pepper flakes, to taste, optional
- Salt and pepper, to taste
- Lemon wedges for serving, optional
- Broccoli, steamed for serving, optional
Directions:
For the Mediterranean Sauce:- In a pan heat 2 tbs avocado oil
- Add sliced sweet red pepper and sauté until tender
- Add garlic and artichokes to the peppers and sauté one minute
- Add the lemon juice, lemon zest, cooking wine, salt, pepper, and red pepper flakes to the veggies and mix
- Remove the pan from the heat and set to the side
- Heat a separate large Dutch oven skillet with 2 tbs avocado oil
- Add cod filets and brown each side of the cod filets (fresh about 2-3 minutes per side, with frozen filets it should be about 5 min per side)
For the Rest of the Dish:
- Add the veggie mixture over the top of the cod filets and cover on a low heat ***Do not clean the sauté pan used to cook the veggies
- Sauté the squid for 2-3 minutes in the empty, but oily veggie sauté pan (It will absorb the flavors and will not need any extra oil)
- Add the partially cooked calamari over the cod and veggies
- Broil on high 10-15 minutes, tossing the calamari lightly with the veggies every few minutes so that it does not burn
- Serve with a fresh lemon wedge and steamed broccoli, optional
