This dish is so easy and tasty!

Ingredients:
(For one serving)
1/3 small zucchini, sliced
2 handfuls of mixed power greens (or any greens)
1 small scallion, sliced
1 tsp coconut oil, for sautéing
pinch garlic powder
pinch curry powder
pinch turmeric
salt and pepper, to taste
Directions:
- Heat the coconut oil in a sauté pan over medium/high heat
- Add mushrooms and whites of the scallion, sauté for one minute
- Add all of the spices
- Turn down the heat to medium and add the zucchini, sauté for one minute
- Add the greens and the rest of the scallion
- Serve! Try it...
- over a roasted or mashed sweet potato
- over avocado toast in my Typical Breakfast
- on top of a burger
- or just enjoy as a side dish to any meal like I did with the eggs and avocado shown below!
