This soup is dairy-free, takes only a few minutes to make, and is absolutely delicious!
Ingredients:
1/3 c marinara sauce (I like the glass jars of Rao's Homemade Marinara)
1/4 c water
avocado oil (or olive)
1 heaping tbs nutritional yeast, or more to taste
1/2 small zucchini
a few small white button mushrooms, sliced
salt and pepper
red pepper flakes, optional
Directions:
Take a vegetable peeler and peel the zucchini into ribbons
Heat a small amount of avocado oil in a sauté pan
Add sliced mushrooms and sauté
Add the zuchinni ribbons, salt, and pepper
Sauté for a few minutes until slightly tender
Add marinara sauce and water to the pan, toss with the veggies
Simmer for one minute (or until sauce is hot)
Add the soup to a bowl
Add the nutritional yeast and red pepper flakes to the tomato soup and veggies, stir *the nutritional yeast is what gives it a creamy texture and flavor
