Creamy Tomato Soup with Zucchini Ribbons
This soup is dairy-free, takes only a few minutes to make, and is absolutely delicious!
Ingredients:
- 1/3 c marinara sauce (I like the glass jars of Rao's Homemade Marinara)
- 1/4 c water
- avocado oil (or olive)
- 1 heaping tbs nutritional yeast, or more to taste
- 1/2 small zucchini
- a few small white button mushrooms, sliced
- salt and pepper
- red pepper flakes, optional


Directions:
- Take a vegetable peeler and peel the zucchini into ribbons
- Heat a small amount of avocado oil in a sauté pan
- Add sliced mushrooms and sauté
- Add the zuchinni ribbons, salt, and pepper
- Sauté for a few minutes until slightly tender
- Add marinara sauce and water to the pan, toss with the veggies
- Simmer for one minute (or until sauce is hot)
- Add the soup to a bowl
- Add the nutritional yeast and red pepper flakes to the tomato soup and veggies, stir *the nutritional yeast is what gives it a creamy texture and flavor
