Coconut Crusted Cod


Try this dish over salad, add it to tacos, or serve with a side of quinoa and veggies!


Ingredients:


For the Cod

2 cod fillets
1 egg
1/2 cup coconut flour
1/2 cup unsweetened, shredded coconut
pinch of salt


For the Sauce, optional 

1 tsp chili paste
1 tbs unsalted almond butter (or peanut butter)
2-4 tbs water 

Directions:


  1. Preheat the oven to 400 degrees F
  2. Combine salt, coconut flour, and shredded coconut in one bowl
  3. Crack one egg into its own bowl and whisk to combine yolk and white
  4. Dip each cod fillet into the egg mixture (dripping off excess), then flour mixture, coating evenly
  5. Place each fillet on a skillet or sheet pan
  6. Bake for 10 minutes, flipping half way through 
  7. Optional: mix ingredients for sauce (starting with 2 tbs of water and adding more to desired thinness)
  8. Serve and enjoy!
